Today's article is about French cuisine. Who talks about French cuisine obviously talks about quiche! 

A savoury ''salted tarte'', consisting of puff pastry crust filled with eggs, milk, cream, cheese, meet or what ever you like.

  • Lets start with the puff pastry:

2 options: you can buy the puff pastry usually frozen, mind you the ''real'' one is not that easy to find. I did find it multiple times at Whole foods or Fresh Market.

Option 2, you decide to be a real chef and make it yourself. 

Ingredients for the puff pastry:

  • 1 full cup of flower (250 grams)
  • 5/8 cups of butter (125 grams)
  • 3 spoons of water
  • salt

In a large pot, mix the flower, softened butter, salt, water until the dough holds together enough to clean the sides of the bowl. shape in a bowl and allow it to rest for at least 1 or 2 hours. You can also make the dough the day before.

Ingredients for the filling:

  • 14 ounces (40cl) of heavy cream (I personally like to do half milk, half cream that way it is lighter, up to you!)
  • 4 eggs
  • salt
  • pepper
  • Choice of flavor (this recipe will be a ''quiche lorraine'' the most traditional French quiche. Thus, we will add bacon without fat) 
  • parmesan
  • gruyère  

In a large pot, mix the eggs with the cream add a little salt and pepper. At this pointe your preparation should look like a heavy milkshake make sure it is not too liquid. 

Than, add a little gruyère and parmesan. Play it by ear. Cooking is not only about the recipe, feeling is very important. It has to be fun! 

Cook the bacon in a pan and add it to your preparation. Mind you a quiche can be any flavor: spinach, onion, cheese, leek etc... Bacon and cheese are already very salty, you might not need to add salt.

  • You are now half way.

Butter your pie plate (9 inch if possible, you want your quiche to be high).  Line the puff pastry with the pie plate. Once done the secret is to add parmesan on it (before being cooked).

Finally take a knife and make little wholes all over. Bake for about 10-15 minutes. The dough should look half cooked.

Poor your preparation in the pie plate. Bake the quiche until a knife inserted one inch from the pastry comes out clean. About 25 to 35 minutes.

Let stand 10 minutes before serving. Add little pieces of chives for decoration and a salad to complete your meal.
